Walnut Green Beans with Lemon Dijon Dressing

Charred green beans are tossed with lemon, dijon mustard, and shallots. Walnut oil and chopped walnuts provide extra flavor and texture!

Servings 8 people

Ingredients

  • 1 tbsp butter
  • 1 tbsp walnut oil
  • 2 lbs green beans, cut into 1" pieces (Exactly one bag from Costco)
  • 3/4 tsp sea salt
  • 3/4 tsp ground pepper
  • 1 1/2 tsp garlic, minced
  • 1 tbsp dijon mustard
  • 4 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 tbsp finely chopped shallots (Or onion)
  • 3 tbsp walnuts, chopped
  • Extra walnut oil for drizzling right before serving. (Optional)

Instructions

  1. In a small bowl, whisk together mustard, lemon juice, lemon zest, and shallot. Set aside.

  2. Heat a large sauté pan over medium heat. Add butter, 1 tablespoon walnut oil, and all green beans. Toss only occasionally so that green beans get some char marks. After 4 minutes, add in salt, pepper, and garlic. Stir occasionally and cook for another 5 minutes, reducing heat slightly if necessary so garlic doesn't burn. 

  3. Taste a green bean to see if it's thoroughly cooked. Then, turn off heat and add in lemon/mustard sauce and chopped walnuts, tossing together. If desired, drizzle with more walnut oil immediately before serving. Enjoy!
