Ingredients

For the peach base:

  • 8 large ripe peaches (about 6 cups), peeled, pits removed, and sliced
  • 3 tbsp sugar
  • 2 tbsp all-purpose flour
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

For the topping:

  • 3/4 cup all-purpose flour
  • 3/4 cup whole oats
  • 3/4 cup dark brown sugar, packed Can sub light brown sugar
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cut into cubes
  • 1/2 cup pecans or walnuts, chopped (Optional)

Instructions

  1. Preheat the oven to 350 degrees.

  2. In a large bowl combine all ingredients for the peach base (peaches through lemon juice). Once combined, pour into a 3 quart baking dish or medium cast iron skillet.

  3. In a new bowl, combine the flour, oats, brown sugar, cinnamon, ginger, nutmeg, baking powder, baking soda, and salt. Then add the butter and cut it into the flour mixture until it resembles coarse crumbs. Then, add in chopped nuts if using.

  4. Sprinkle the crumb topping evenly over the peaches.

  5. Bake at 350 degrees for 23-28 minutes, until bubbly and light brown on top.

  6. Try to be patient and let it sit for at least 20 minutes before serving. Serve warm piled with vanilla ice cream. Enjoy!

Recipe Notes

I find the easiest way to peel and slice the peaches is to cut the peaches in half and remove the pit. Then I cut each half into 8 slices, and peel or cut the peel off of each individual slice. It takes a little bit of patience but it's worth it!
