Healthy Tahini Cardamom Oat Cookies

Healthy cookies made with oat flour and sweetened with maple syrup. 

Servings 12 cookies

Ingredients

  • 1 cup + 2 tbsp oat flour I like coarsely ground oat flour for this recipe. To make oat flour, just grind whole oats in a blender or food processor. You can probably use whole oats or quick oats in this recipe as well.
  • pinch of salt
  • 1/3 cup hazelnuts, toasted until golden brown, then lightly chopped
  • 1/3 cup dark chocolate chips
  • 1/3 cup tahini
  • 1/3 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp cardamom

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together tahini and maple syrup. Add oats, salt, and spices. Then mix in nuts and chocolate, and let dough rest for a minute. 

  3. Form into balls and place on baking sheet. Bake for 10-12 minutes until very lightly brown on top.
