The Holidays, Already??
Thanksgiving is right around the corner! I’ve got you covered with this delicious, healthy, and simple side dish. Even though it doesn’t contain cups and cups of butter, I guarantee it will stand out on the table because it is irresistibly good. Your family will never know that you’re sneaking a healthier dish onto their Thanksgiving table. Plus, if you prepare the ingredients in advance, this can be whipped together just minutes before serving.
I love Thanksgiving. Specifically, I love sweet potatoes and stuffing and will use any excuse possible to fill my plate with them. This year will be different though. I’m not at home getting ready for a big family gathering. For the first time in as long as I can remember, I will not be cooking on Thanksgiving. Right now we’re finishing up our time in China (what an experience!) and tomorrow we fly to Thailand. I honestly have no idea what we’ll be doing on Thanksgiving this year. It may involve eating traditional Thai food just like any other night, but I do know it won’t involve cooking. Luckily, our family is amazing and made a Thanksgiving dinner (with all the fixings!) this past summer before we left.
I have a few travel recaps coming up (my gosh, I am so behind), but I want to get you this recipe asap so it can make an appearance on your holiday table. You’ll be glad you tried it out. Also, these green beans come together so quickly that they make a great side dish for simple weeknight dinners. These green beans, a baked sweet potato, and any favorite protein is the perfect meal. Make sure you make extra to enjoy as leftovers for lunch the next day!
About These Green Beans
Green beans get charred slightly in butter, and then are tossed with lemon, dijon mustard, shallots, and walnuts. These strong flavors marry together perfectly and the walnuts add a nice texture. This can be made in just a few minutes and reheats well as leftovers (if it lasts that long).
Also, this recipe uses one entire bag of green beans from Costco. There’s something so satisfying about using the entire package.
Don’t have walnut oil? It can easily be left out because these green beans have plenty of flavor going on. But if you want something extra special, a bottle of walnut oil is a worthy kitchen investment.
Walnut Green Beans with Lemon Dijon Dressing
Charred green beans are tossed with lemon, dijon mustard, and shallots. Walnut oil and chopped walnuts provide extra flavor and texture!
Ingredients
- 1 tbsp butter
- 1 tbsp walnut oil
- 2 lbs green beans, cut into 1" pieces (Exactly one bag from Costco)
- 3/4 tsp sea salt
- 3/4 tsp ground pepper
- 1 1/2 tsp garlic, minced
- 1 tbsp dijon mustard
- 4 tbsp fresh lemon juice
- 1 tsp lemon zest
- 3 tbsp finely chopped shallots (Or onion)
- 3 tbsp walnuts, chopped
- Extra walnut oil for drizzling right before serving. (Optional)
Instructions

In a small bowl, whisk together mustard, lemon juice, lemon zest, and shallot. Set aside.

Heat a large sauté pan over medium heat. Add butter, 1 tablespoon walnut oil, and all green beans. Toss only occasionally so that green beans get some char marks. After 4 minutes, add in salt, pepper, and garlic. Stir occasionally and cook for another 5 minutes, reducing heat slightly if necessary so garlic doesn't burn.

Taste a green bean to see if it's thoroughly cooked. Then, turn off heat and add in lemon/mustard sauce and chopped walnuts, tossing together. If desired, drizzle with more walnut oil immediately before serving. Enjoy!
