The Perfect Avocado Toast

I know that the Internet has a lot of avocado toast recipes, but here’s the thing: this is the only one you need. It’s made from simple ingredients that are easy to keep on hand. I’ve spent a long time perfecting different combinations of egg, bread, and avocado, and this is the final version that I’ve been eating regularly for the last few years and have not wanted to change. Yes, years. Bonus: this “recipe” can be whipped up in no time.

On a recent trip to San Francisco, I went out for breakfast and could not believe that avocado toast was $15. Seriously?? This was before even adding an egg! Don’t pay those prices. You can make this at home for way less and it’ll probably taste better anyway.  

What’s important for this avocado toast?

  1. Good sourdough bread. I like to buy mine as a whole loaf, slice it myself, and then toast it until it’s a bit crispy.
  2. Ripe avocados (preferably Hass – buttery and delicious!). Maybe also a thick slice of homegrown tomato if you’ve got one.
  3. Goat cheese. This melts a bit under the warm egg, and is just meant to be combined with avocado.
  4. “Everything But The Bagel” seasoning. You need this. The salt, the lightly crunchy seeds, the garlic – this is an essential component. (I buy mine at Trader Joe’s, but have heard that it’s now available at Costco. Or, you can attempt to make your own.)
  5. Good eggs. I like mine fried with some salt and pepper. Scrambled is also good, but isn’t quite as easy to eat. (Hint: it will roll onto your clean pants right before work.)
  6. Frank’s Hot Sauce. Another essential component. It’s really not complete without Frank’s.

That’s it! Have fun, go to town, be like me and eat this for dinner sometimes. Whatever you do, please don’t pay $15 for avocado toast ever again. Enjoy!

The Perfect Avocado Toast

Freshly toasted sourdough topped with mashed avocado, fried eggs, goat cheese, and all sorts of seasoning. This has been my favorite version of avocado toast for years and I eat it multiple times per week.

The recipe specifies ingredients, but no does not specify quantities so that you can use the perfect amount to you.

Prep Time 10 minutes
Servings 2 people

Ingredients

  • 4 slices fresh sourdough bread, toasted Or your favorite bread!
  • 1-2 whole ripe Hass avocados, mashed
  • goat cheese
  • 4 whole eggs, fried or scrambled! Be sure to season with salt and pepper.
  • fresh tomato slices
  • Everything But The Bagel Seasoning Can be bought at Trader Joe's
  • Frank's hot sauce

Instructions

  1. Cook eggs according to your preference. I like mine fried, seasoned with salt and pepper, with the yolk still runny.

  2. While the eggs are cooking, toast the bread and mash up all the avocado. When the eggs are done it's time to assemble!

  3. Spread desired amount of mashed avocado onto toasted bread. Top with tomato slices (if using) and crumbled goat cheese. Put hot eggs on top of goat cheese, then sprinkle with lots of Everything But The Bagel seasoning and add Frank's hot sauce right before eating. Enjoy!

    Avocado toast is one of my favorites for breakfast and my daughter has grown very fond of it too to start the day. Thanks for all these great tips and a lovely recipe.

      So glad you enjoyed it! My husband eats it 7 days per week, so apparently there’s no such thing as too much avocado toast!
