I constantly tinker with recipes, and once I find “the” version I plan to use forever, I write it down for my recipe box. That is how I came up with this peach crisp rendition many years ago. I never posted it because I felt like the internet had enough peach crisp recipes, but this has been and always will be the only version I ever make. After spending an hour searching my house for this recipe yesterday morning, I realized the reason I started this blog was to use it as my personal online recipe catalogue. Why have I not posted the best peach crisp recipe ever?? There might be ten zillion crisp recipes on the internet, but if this recipe isn’t posted, there obviously aren’t enough recipes out there. I realized I have been holding out, friends. I have been holding out.
Why this peach crisp is the best one ever
-The perfect combo of crispy, gooey, and crumbly. Not at all cakey.
-FINALLY enough topping. Don’t you hate when there just isn’t enough of that irresistibly chewy, crumbly, and sweet topping? This version solves that problem.
-Dark brown sugar gives the topping an intense caramel-like flavor.
-Not too sweet. Believe me, it’s still sweet, but not too sweet. We want to let those peaches SHINE.
-Nuts for a little extra crunch if that’s your thing. It’s definitely my thing.
-Warming spices. Cinnamon, ginger, and nutmeg give this that little extra oomph that you can’t quite put your finger on.
Tips & Tricks
Can I substitute other fruit?
Absolutely! I think this would be delicious with apples. You can also use a combination of stone fruit as long as it equals about 6 cups total. Blueberries would be really good (unless you would rather make my very popular Blueberry Cobbler).
Do I have to peel the peaches?
Yes, I think this tastes the best when the peaches are peeled, but it’s really your choice. I find the easiest way to peel and slice the peaches is to cut the peaches in half and remove the pit. Then I cut each half into 8 slices, and peel or cut the peel off of each individual slice. It takes a little bit of patience but it’s worth it!
Best Ever Peach Crisp

Ingredients
For the peach base:
- 8 large ripe peaches (about 6 cups), peeled, pits removed, and sliced
- 3 tbsp sugar
- 2 tbsp all-purpose flour
- 1 tsp cinnamon
- 1 tbsp lemon juice
For the topping:
- 3/4 cup all-purpose flour
- 3/4 cup whole oats
- 3/4 cup dark brown sugar, packed Can sub light brown sugar
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp nutmeg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, chilled and cut into cubes
- 1/2 cup pecans or walnuts, chopped (Optional)
Instructions

Preheat the oven to 350 degrees.

In a large bowl combine all ingredients for the peach base (peaches through lemon juice). Once combined, pour into a 3 quart baking dish or medium cast iron skillet.

In a new bowl, combine the flour, oats, brown sugar, cinnamon, ginger, nutmeg, baking powder, baking soda, and salt. Then add the butter and cut it into the flour mixture until it resembles coarse crumbs. Then, add in chopped nuts if using.

Sprinkle the crumb topping evenly over the peaches.

Bake at 350 degrees for 35-45 minutes, until bubbly and light brown on top.

Try to be patient and let it sit for at least 20 minutes before serving. Serve warm piled with vanilla ice cream. Enjoy!
