Healthy Tahini Cardamom Oat Cookies. Naturally gluten free, oats to keep you satiated, and dark chocolate chunks because… chocolate. These healthy cookies are so freaking good, and have been on repeat at my house for the last few months.
Tahini and I are having a moment. I’m not sure what took me so long to discover all of its wonderful uses (other than being a main ingredient in hummus, which… is also important). I think it may have started with this recipe. Those chocolate chip tahini cookies came out so good that I basically never looked back. Now I’m adding tahini to salad dressings, mixing it with lemon juice to make simple sauces, having grain bowls topped with a maple tahini dressing, contemplating a banana tahini smoothie that I know will be delicious even though I haven’t tried it yet, and considering some tahini brownies. I’m basically having dreams about tahini here guys. Sweet, savory, incredibly nutty, tahini is so delicious and incredibly versatile!
Let’s start our tahini adventures with these cookies. I promise this won’t be the end of it. These are made without white flour and are sweetened with maple syrup. I believe that makes them naturally gluten free, and basically healthy enough for breakfast. Just like myself and tahini, cardamom and tahini are also a match made in heaven. Don’t leave out the cardamom. I will know, and you’ll be missing out.
You can really use any type of nuts for this recipe. I’ve tried it with all types and hazelnuts remain my favorite.
Healthy Tahini Cardamom Oat Cookies
Healthy cookies made with oat flour and sweetened with maple syrup.
Ingredients
- 1 cup + 2 tbsp oat flour I like coarsely ground oat flour for this recipe. To make oat flour, just grind whole oats in a blender or food processor. You can probably use whole oats or quick oats in this recipe as well.
- pinch of salt
- 1/3 cup hazelnuts, toasted until golden brown, then lightly chopped
- 1/3 cup dark chocolate chips
- 1/3 cup tahini
- 1/3 cup maple syrup
- 1 tsp cinnamon
- 1 tsp cardamom
Instructions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In a medium bowl, whisk together tahini and maple syrup. Add oats, salt, and spices. Then mix in nuts and chocolate, and let dough rest for a minute.

Form into balls and place on baking sheet. Bake for 10-12 minutes until very lightly brown on top.
