Pistachio Cardamom Overnight Steel Cut Oats are going to be your next favorite breakfast! Any chance you need a quick healthy breakfast that keeps you full, tastes like dessert, and can be made 5 days in advance and still tastes great? Boy oh boy, do I have the recipe for you.
I came up with this recipe because I made this pistachio cake and ended up with way too many ground pistachios. (That pistachio cake, by the way, is completely incredible.) I wasn’t going to throw them away, but I also wasn’t particularly keen on just eating pistachio crumbs. I started brainstorming ways to use up said crumbs when it dawned on me… overnight oats.
How these delicious oats came about:
I decided to use steel cut oats, because I love how they remain chewy days later. My immediate second inclination was to add cardamom, because I believe it is the ultimate accompaniment to pistachios. Peanut butter and jelly, chips and salsa… pistachios and cardamom. I added a dab of maple syrup to sweeten the oats and patiently let them soak overnight. After my very first bite the next day I realized, “Oh my gosh, I have just created healthy breakfast baklava in a jar!” That’s right, I took baklava, the delicious layered filo pastry, and captured that same incredible flavor in overnight oats. This is a delicious breakfast decision that you will not regret.
I’ve eaten this for breakfast the last four days in a row, and they’re still not soggy. This is the perfect breakfast to meal-prep on Sunday night, and then just grab from the fridge when you’re running out the door in the morning. I’m proud to report that this is extremely portable, and I have eaten it at a desk in front of a computer, while driving, and while sailing a boat. Yes, really. (Look mom, no spills!) It’s quick, healthy, not messy, and incredibly delicious! I also like to throw a handful of fresh fruit on top (current favorites include blueberries and peaches) and maybe some granola if you’re craving an extra crunch. Need a protein boost? Mix a big scoop of greek yogurt in while you’re preparing it. Delish!

Breakfast Baklava in a Jar 😉

Cardamom Pistachio Overnight Steel Cut Oats
All the delicious flavors of baklava come together to form delicious healthy oatmeal perfect for meal-prep! This can be made 5 days in advance and will not get soggy.
Ingredients
- 1/3 cup steel cut oats
- 2/3 cup milk of choice (My favorite is homemade almond milk. Coconut milk and whole milk would also be delicious.)
- 1/4 tsp cardamom
- 1 tsp maple syrup May need more to taste. My almond milk is sweet.
- 1/2 tbsp chia seeds
- 2 tbsp ground pistachios, roasted & unsalted
Instructions

Grind the pistachios. I used a coffee grinder, but a food processor would also work well. If chopping by hand, make sure they're as fine as possible.

Combine all ingredients in a jar and shake vigorously. Store in fridge overnight, then give it a small shake before digging in.
Recipe Notes
For extra protein, add a big scoop of plain greek yogurt! If you're a topping kind of person, I recommend fresh fruit and a handful of granola.
Make sure your pistachios are finely ground. Leaving them in crunchy chunks sounds like a good idea, but they'll absorb the milk overnight and will lose that crunch.
