Cinnamon French Toast for Two

This Cinnamon French Toast for Two is the perfect weekend breakfast. Thick-cut cinnamon bread dipped in an egg batter and then cooked to perfection. It makes the perfect amount for two people, because reheated leftovers aren’t quite the same. This is my go-to fancy weekend breakfast recipe!

My dad loves cooking too, and one special thing he used to do on most weekends is make a special breakfast for everyone. The choices were almost always pancakes, waffles, or French toast… and judging by this post, you can probably guess which option I went with when it was my turn to pick.

Confession: I LOVE French toast. I love it so much I’m afraid to order it when we eat out for breakfast, because I don’t want to be disappointed. I’ve perfected this recipe over the years, and make this almost every weekend. It’s custardy on the inside (nothing is worse than dry French toast) and slightly crispy on the outside (if you make it just right). When served with some melted butter and real maple syrup on top, I don’t think many breakfasts can beat this.

How to make this French toast

Ingredients: just a couple simple ones!

  • Bread (I like the thick-cut cinnamon swirl bread without raisins from Trader Joe’s, but you can also substitute brioche)
  • Good butter
  • Eggs
  • Whole milk (feel free to sub cream #yolo)
  • Vanilla extract or vanilla bean paste
  • Cinnamon & Nutmeg

Once you’e got your ingredients gathered, it’s time to make a quick egg mixture for dipping the bread. Make sure you use a dish with a flat bottom so the bread can soak it up evenly.

Then it’s time to dip and fry! I like to flip the bread in the egg mixture 3 times so each side is dipped twice. The entire dipping process should take about 20 seconds. You don’t want the bread to be too dry, but it shouldn’t be entirely soggy either.

Then heat a skillet with a generous amount of butter, and fry those beautiful slices on medium heat until they get a nice golden brown color. If you’re not sure whether the middle has finished cooking you can tap on the center of a slice and see if it seems to have firmed up.

Then top with butter and syrup and enjoy!! I hope you love this easy yet fancy-feeling breakfast as much as I do. Nothing says Sunday morning like a delicious mug of coffee and plate of this French toast!

Cinnamon French Toast for Two

Servings 2 people

Ingredients

  • 4 slices thick-cut cinnamon bread (or brioche)
  • 2 eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 pinch salt
  • 1 tbsp butter

Instructions

  1. In a flat-bottomed dish, whisk together eggs, milk, vanilla, cinnamon, nutmeg, and salt.

  2. Heat a large skillet over medium heat. Toss the butter into the skillet so it can start melting while the bread is dipped into the egg mixture.

  3. Take the first slice of bread and dip it into the egg mixture. I like to flip it 3 times so each side is dipped twice. The entire dipping process should take about 20 seconds. Then, add the slice to the hot skillet. Repeat 3 more times with the rest of the bread. There should be no egg mixture left over. If there is, I like to pour a little on each slice in the pan before they're flipped.

  4. Once the first slice has cooked for 2 1/2 minutes, flip it to the other side. It should be golden brown. Repeat with the other slices, in the order they were put in the pan. Cook for 2 minutes on the second side, then turn off the heat. Serve with lots of butter and maple syrup!

    This is delicious, I added a little brown sugar, and cooked it longer, but I was very satisfied with the results. Will be making again.
