Breakfast Meal Prep: Braised Ginger Cabbage with Eggs and Rice

Cabbage is braised with ginger and broth until tender, then topped with soft scrambled eggs and rice to form the coziest winter breakfast!

I know this recipe sounds a bit odd, and to be honest I sort of invented it by accident. I was originally planning to make a ramen with lots of ginger (because I looove ginger), but somehow my ramen recipe morphed into this. I’m not sure where I made the wrong turn, but it really worked out for the best. Anyway…

ARE YOU REALLY MAKING CABBAGE FOR BREAKFAST?

Yes indeed. Bowls of cabbage probably won’t be the next big thing on Instagram, but who cares?

INFINITE VARIATIONS OF GINGER CABBAGE

This makes the most delicious and wholesome winter breakfast, really warms you up, and is incredibly versatile. Though my go-to is scrambled eggs and rice, many other proteins and carb sources go well with this cabbage. You can cook the eggs any way you like, or even substitute breakfast sausage. To make this completely paleo, use baked sweet potato in place of the rice. When I’m feeling lazy I use a bag of cooked rice, but farro, barley, or any other grain is delicious as well.

Here’s the equation for your next favorite breakfast:

BRAISED GINGER CABBAGE

+PROTEIN (EGG, SAUSAGE, ETC.)

+GRAIN OR SWEET POTATO

=DELICIOUS

So many possible variations!

This is also a great recipe to meal prep on Sunday and divide into breakfast containers for the week. I prep 3-4 at a time and heat them up at work. I’ve been making this recipe for YEARS and I’m not tired of it yet. Totally delish.

But what the heck are soft scrambled eggs?

Basically, these are scrambled eggs (only ingredients=eggs+salt+butter) that are cooked over medium-low heat until they’re just barely set. I like to scramble the raw eggs in a separate bowl, melt butter in the pan, and then pour in the eggs. I stir them occasionally as they begin to cook. Braised Breakfast Ginger Cabbage

Cabbage is braised with ginger and broth until tender, then topped with soft scrambled eggs and rice to form the coziest winter breakfast!

Course Breakfast
Prep Time 5 minutes
Cook Time 15 minutes
Servings 4 people

Ingredients

Braised Cabbage:

  • 1 tbsp butter
  • 1 whole green cabbage, cut into thin slices
  • 1 cup chicken broth
  • 2 tsp minced garlic
  • 2 tbsp ginger root, grated
  • 1 tsp salt
  • 1/2 tsp black pepper

Other:

  • eggs Cooked your favorite way! I prefer softly scrambled.
  • baked sweet potato/rice/other grains

Instructions

  1. In a soup pot over medium heat, sauté ginger and garlic in butter until aromatic.

  2. Add cabbage and sauté 2 minutes. Add broth, salt, and pepper, and cook until tender (about 10 minutes covered, stirring occasionally). Taste to see if it needs any more seasoning, since cabbage sizes can vary.

  3. To assemble: In a bowl use cabbage as the base, then top with cooked eggs and rice. Serve warm with a hot cup of coffee!

Other healthy meal prep favorites include roasted cauliflower soup and pistachio cardamom overnight oats.
