These delicious adobo roasted cauliflower breakfast tacos are packed with veggies and great for any meal of the day! I love tacos in all sizes, shapes, and forms and these do not disappoint. There’s so much flavor packed on top of each tortilla, and they’re not weighed down with greasy meats. This is the ultimate fresh and healthy treat, all topped with a squeeze of lime. Yum.
So what’s in these tacos?
Roasted Veggies: I started with a big tray of cauliflower, sweet purple onion, and fresh summer corn, topped it with an assortment of delicious spices, and then roasted them to perfection. These are vegetables that taste so good you’ll forget you’re eating vegetables.
Eggs: A delicious protein source to keep you satiated. Make them any style you like! I was in a scrambled mood, but I think over easy would be delicious as well!
Creamy Adobo Sauce: Smoky with a hint of heat, this is what ties the tacos together. It’s also really easy to make, so don’t leave this out!
The Extras: Beans, guac, and a squeeze of lime. I started each taco with a dollop of refried beans. They’re delicious, a great source of protein, and help to hold the toppings in place. Guacamole because it’s delicious on everything! Also, the healthy fats from avocados make these extra satisfying. Lastly, a squeeze of lime because it’s basically a taco requirement. Also, my yard has a million lime trees so I add it to everything I possibly can.
Queso fresco would also be a great addition!
Make sure you toast your tortillas before assembling everything. It really freshens them up, makes them way more pliable, and the toasty flavor is darn good!
Where to find Chipotle Peppers in Adobo Sauce?
Chipotle peppers in adobo sauce are available in the international section of most grocery stores. You can also purchase them online here. Don’t throw away the rest of the can! It will last for weeks (maybe months?) in the fridge.

Adobo Roasted Cauliflower Breakfast Tacos
Tacos packed with smoky cumin-roasted cauliflower, corn, and sweet onions, plus your favorite style eggs (scrambled?! over easy??) topped with a creamy roasted adobo sauce. These are great for any meal of the day.
Ingredients
- 10 corn tortillas
- 1 cup refried beans (optional)
- 10 eggs
- 2 avocados (sliced, mashed with salt, or made into guacamole!)
Roasted Vegetables
- 1 large purple onion, quartered then thinly sliced
- 1 1/2 cups fresh summer corn about 3 ears
- 1 medium cauliflower, chopped into small pieces the size of an olive
- 3 tbsp avocado oil (or olive oil)
- 1/2 tbsp coriander
- 1 tbsp cumin
- 1/2 tbsp smoked paprika
- 2 tsp sea salt
- 1 tsp ground pepper
- 2 tsp minced garlic
Creamy Adobo Sauce
- 1/2 cup plain whole milk yogurt
- 2 tbsp avocado oil mayo
- 1 tbsp lime juice
- 1 whole chipotle pepper + 1 tbsp adobo sauce (from the canned chipotle peppers in adobo sauce)
Instructions

Heat oven to 450 degrees and grease a rimmed baking sheet. (For super easy clean up line the baking sheet with foil first.) Prep all veggies to roast, then toss with oil and spices. Pour veggies onto baking sheet in a single layer and roast for 25-30 minutes.

While veggies are roasting, prepare adobo sauce. Combine all ingredients in a blender and process until smooth. Store sauce in the fridge so it stays thick.

Heat up refried beans. Cook one egg per taco according to your preferred method. Scrambled is easiest for a crowd, but over easy is delicious too!

To assemble: Toast tortillas directly over a low flame on your gas stove until the edges are slightly browned. Then add a dollop of refried beans, big scoop of roasted veggies, and one egg. Garnish with a generous amount of creamy adobo sauce and some avocado. Enjoy!
Recipe Notes
Sometimes the avocado slices don't stay put in the taco. To solve this, you can mash them with a pinch of salt and a squeeze of lime. So tasty!
