Hello, and welcome to my kitchen! I’m Lindsey (a.k.a. Chapi) and I’m so happy to finally be writing this blog! Thank you for being here! Cooking has been a passion of mine for as long as I can remember, and I’m constantly tinkering with, or recreating dishes that I discover while traveling. This is where I hope to keep track of my favorite creations and share it all with you!

What you’ll find on this site: Most things I make are fresh, seasonal, and come together quickly. I have a penchant for healthy foods, but firmly believe that life is all about balance. I love going all in for the perfect 12 hour smoked brisket, believe that cheese makes everything better, and have a special place in my heart reserved for decadent desserts. When I recreate recipes from abroad, I often “healthify,” simplify, and aim to make them attainable for the home cook. I believe everyone is capable of eating healthy, delicious, and exciting food every day!

About me: Born and raised in San Diego, California, I live for the outdoors. I’ve always led an active lifestyle, with running, CrossFit, and mountain biking being at the top of that list. By day I’m a tax accountant, but my happy place is when I’m discovering new places, stopping at all the coffee shops, or sharing delicious food with family and friends.

Likes: Cappuccinos, dark chocolate, kabocha squash, sushi, tacos, almond butter, lamb, cheese, cardamom, almond croissants, tiramisu, blueberries, and every single vegetable in the land.

Dislikes: Olives, dried fruit, and papaya.

Why Chapi’s Kitchen?

Chapi (a.k.a. Shorty) is a nickname endearingly given to me while living in Chile.  Long after moving back to sunny California, the name seems to have stuck around.

Taking a cooking class in Thailand so I could learn all of their secrets. Biggest takeaways? Fresh ingredients, plenty of aromatics, and LOTS of coconut oil.
